Shredded brussels sprouts, nutty Manchego cheese, toasted hazelnuts, and juicy pomegranates, all tossed with a warm cider vinaigrette that’s sweet and tangy. Prep Time: 20 minutes Cook Time: 10 minutes Total Time: 30 minutes Calories: 715kcal Ingredients 6 cups shredded brussels sprouts (about one 12-ounce bag) 1 1/2 cups grated Manchego or parmesan cheese 1/2 cup toasted hazelnuts or pecans, roughly chopped 1 1/2 cups pomegranate arils 6 thick cut slices bacon, chopped 1/3 cup extra virgin olive oil 1 medium shallot, thinly sliced 2 tablespoons apple cider vinegar 1 tablespoon apple butter or fig preserves 1 tablespoon fresh thyme leaves 1 teaspoon fresh orange zest kosher salt and black pepper pinch of crushed red pepper flakes Directions In a large salad bowl, combine the shredded brussels sprouts, cheese, hazelnuts, and pomegranate arils. Cook the bacon in a large skillet over medium heat until crisp. Drain onto a paper towel. Wipe the skillet clean. To make the vinaigrette. Heat the olive oil in the same skillet used to cook the bacon over high heat. When the oil shimmers, add the shallots, cook until fragrant, 2-3 minutes. Remove from the heat, let cool slightly. Add the apple cider vinegar, apple butter, thyme, and orange zest. Season with salt, pepper, and crushed red pepper flakes. Pour the vinaigrette over the salad, tossing to combine. Top the salad with bacon. Serve warm or at room temperature. Instant Pot Pesto Zuppa Toscana This super simple Instant Pot Pesto Zuppa Toscana is the perfect fall weather soup. Prep Time 15 minutes Cook Time 15 minutes Total Time 30 minutes Servings: 6 Calories: 487kcal Ingredients 4 slices thick cut bacon, chopped 3/4 pound ground spicy Italian chicken sausage 1 yellow onion, chopped 4 cloves garlic, minced or grated 2 ribs celery, chopped 4 small yukon gold or russet potatoes peeled and chopped 6 cups low sodium chicken broth 1/3 cup basil pesto, homemade or store-bought juice of 1 lemon 1 pinch crushed red pepper flakes kosher salt and black pepper 1 bunch Tuscan or curly kale, roughly chopped 3/4 cup heavy cream or whole milk 1/2 cup grated parmesan or asiago cheese fresh thyme, for serving (optional) Directions Instant Pot Set Instant Pot to sauté. Add the bacon and cook until crisp, about 5 minutes. Remove the bacon. If there’s excess bacon grease, drain off all but 1 tablespoon. Add the chicken sausage and onions, and brown all over, about 5 to 8 minutes. Add the garlic, celery, and potatoes, and cook 2 minutes. Turn the Instant Pot off. To the instant pot, add the broth, pesto, lemon juice, red pepper flakes, and season with salt and pepper. Cover and cook on high pressure for 8 minutes. Once done cooking, use the natural or quick release function. Set the Instant Pot to sauté. Stir in the kale, cream, and parmesan. Cook until the kale is wilted, about 10 minutes. Turn the Instant Pot off. Stir in the reserved bacon. Serve the soup topped with additional parmesan and fresh thyme, if desired. Stove-Top Cook the bacon in a large soup pot set over medium heat until crisp, about 5 minutes. Remove the bacon. If there’s excess bacon grease, drain off all but 1 tablespoon. Add the chicken sausage and onions, and brown all over, about 5 to 8 minutes. Add the garlic, celery, and potatoes, and cook 2 minutes. During the last 30 minutes of cooking, stir in the kale, cream, and parmesan. Turn the heat to high and cook until the kale is wilted. Stir in the reserved bacon. Once inside, tickets for beer, non-alcoholic beverages, food and merchandise can be purchased. If you are planning to be in Oregon the 2nd weekend in October, you may get to experience a sight to behold – an annular solar eclipse. Sky-watchers in parts of Oregon will be among the first in the U.S to see the big show before it continues towards Texas and Central America. Those inside the path of the eclipse will see the sun appear as a bright ring-shaped halo around the edges of the moon for a full 4 minutes before it moves southeast. What Causes the Dramatic Ring of Fire? An annular solar eclipse occurs only when the moon is at its furthest point from the Earth and passes between our planet and the sun. Because the moon is too far away to block out the sun completely, it creates a brilliant “ring of fire” around it. Where and When to Watch The 2023 annular solar eclipse will be visible along a narrow path crossing from Oregon to Texas. The eclipse will make landfall along parts of the Central and Southern Oregon Coast (including Coos Bay and North Bend shortly after 8 a.m., before reaching “annularity” at 9:18 a.m. on October 14, 2023. This interactive map from the Oregon Museum of Science and Industry (OMSI) will help pinpoint locations to view the eclipse. How to View the Eclipse Safely The only safe way to view a solar eclipse is with special eclipse glasses or a solar filter. Never look directly at the sun, even during a partial eclipse, without protection. The sun’s rays can cause serious eye damage, including blindness. Eclipse glasses are specially designed to filter out the sun’s harmful rays. They are available at most astronomy stores and some retail stores. You can also purchase them online. Solar binoculars are another option for viewing a solar eclipse. They are equipped with special filters that protect your eyes. However, solar binoculars are more expensive than eclipse glasses. If you are planning to view the solar eclipse, be sure to get your eclipse glasses or solar binoculars well in advance. Supplies tend to sell out quickly. Local tip: Get your eclipse glasses at the Coos Bay Visitor Center or stop by a Travel Oregon Welcome Center between Oct. 1 and Oct. 14 to pick up a free pair (while supplies last). The image of Lake Wenatchee is iconic – a clear blue, glacier- and snow-fed lake surrounded by the stunning Cascade Mountain Range in the state of Washington. The lake is sunny and warm during the summer with a shallow lagoon – perfect for pint-sized swimmers! Ready to take a dip this summer? Check out our list of tips for a fun-filled day at the lake: Is Lake Wenatchee safe to swim in? Lake Wenatchee has a shallow roped off area designated for swimming on the south side of the state park. At times the wind can pick up causing choppy water, but it is usually calmest close to the shore. How deep is the lake? The 5-mile-long lake is 244 feet deep at its greatest depth and is a popular spot for windsurfers and boaters. Kayaking, Canoeing, Stand Up Paddle-boarding The calmer shores are a great place to grab a paddle and explore this scenic lake. The south side of the park is the easiest place to launch with parking closest to the water. Looking to rent equipment? Lake Wenatchee Adventures offers kayak and SUP rentals daily from 10-6:30 during the summer. They are located at the south entrance near the swimming beach. Getting to the lake Lake Wenatchee State Park is located 16 miles from Leavenworth. From US Highway 2, take a turn at Cole’s Corner north on State Route 207. The official swimming beach is located in the day-use area on the south side of the park. If you prefer to avoid the crowds, you can also access the water on the north side beach, where there is a lovely sandy beach. Is a pass required? Lake Wenatchee State Park requires a Discover Pass in spring, summer and fall. The day pass is $10/annual pass $30, and provides you access to millions of acres of state recreation lands in Washington. Remember when you purchase the pass you are helping keep the state’s numerous outdoor recreation sites open and accessible to the public. Leashed pups are welcome to join in on the fun, too! Stock up for supplies before hitting the lake at Lake Wenatchee Park Store. This general store trys to remember what you forgot!
